Southeastern Louisiana University has started a Garden to Pantry Program to address food insecurity while inspiring a healthy, well-balanced diet. Fresh organic produce and spices are grown on campus, harvested, and made available for students and staff at the “Lion’s Pride Food Pantry.” A variety of fresh
fruits and vegetables are offered when seasonally available. Health Center student interns and volunteer students manage the garden with the help of the on-campus horticulturist. Once produce is ready to be harvested, it is brought to the food pantry for easy access and use. Spices are also available to encourage students to cook and try new healthy recipes. The food pantry contains the latest U.S. Department of Agriculture MyPlate marketing to educate students on a healthy, well-balanced diet.
Moving forward, Matthew would like to partner with Southeastern Louisiana University’s international student organizations to expand to growing produce and spices from around the globe so everyone can feel a little more at home. The garden is a calming place for students to study, relax, or de-stress. The
Garden to Pantry Program can help address food insecurity, nutritional needs, and mental health by being a free and accessible resource on campus for all.
